Well, well, time for a tortilla and why? Cause a tortilla is one of the best choices to manage leftovers or to make sure products like vegetables, herbs or ham don’t end up in the bin.
Tortilla is always something that comes to mind to make sure that all the pennys that i invest in the supermarket are used.
So, basically, I grab;
. yummy leftovers that obviously combine with each other (or some ingredients that seem quite lost in the fridge and cupboard)
. prepare a mix with eggs (no more 2 eggs per person), some milk (I always use almond milk because of my dairy and legumes intolerances)
. season the mix with salt, pepper and herbs (fresh or dry)
. place all the ingredients in a baking tray, (follow an order, like per layers is always a better choice for a better looking result)
. add the egg mix
. put in a pre-heated oven – 180C and bake for 20 to 30 mins or till firm to touch, then remove from the oven and leave on side for at least 5 minutes before you serve
I always serve a piece of tortilla with a beautiful, fresh and colourful salad (rocket, mix leaves, fruit, cucumber, tomato, radish, fennel, nuts, carrots, etc) and you can grate some good cheese on top like a really mature cheddar (use mature cheeses because they have a low percentage of lactose) or a parmigiano reggiano, or any cheese that you fancy.
