Today I want to share with you one more nutritious idea, which is not new and you may have already seen in other blogs, instagram or pinterest (it was there that I got inspiration) this type of savory mini-tarts made with bread instead of shortcrust dough.
I try my best to be simple in the kitchen so I decided to improvise and I quite enjoyed the result.
And more important, it results very well with my son and I believe other children will find these mini-tarts very funny and give them a try.
I should say that you can go mad with filings combinations.
I leave here my recipe and two more fillings suggestions.
Ingredients (6 mini-pies)
-6 Slices of wholemeal bread
-2 Small cans of tuna (drain well)
- 1 small onion, chopped
-1 Clove ofgarlic, crushed and chopped
- 1 large tomato, no seeds and diced
- some olives, chopped
- 1/2 cup of broccoli, cooked al dente, roughly chopped
-3 Beaten medium eggs
-olive oil, salt, black pepper and chopped coriander, all to taste
Preheat the oven at 180ºC.
With a rolling pin flatten the bread slices until very thin. Cut the crusts.
Place each piece of bread in each case, previously brushed with olive oil. Set aside.
Blanch the broccoli in water with a pinch of salt until they are al dente. Drain and chop slightly. Set aside.
I preferred to cook the onion and garlic in a pan with some olive oil t avoid these been reject by children.
Once the onion and garlic are win a translucent tone (low heat, 4 minutes), add the tomatoes, olives and toss everything, cook for another 2 minutes and remove from heat.
Put this mixture to a bowl and then add the broccoli, tuna, chopped coriander, some salt and black pepper.
Fill each tart with this mixture, up to 2/3, and fill the remaining with the mixture of beaten eggs.
Bake for 10minutes and they will be all ready for tasting.
Another two filling alternatives:
- roast peppers, aubergine and courgette (all cut into small cubes) with a drizzle of olive oil, salt, pepper and fresh basil, add some mozzarella cheese or goat cheese - bake
- Ham or bacon, pumpkin and onion (cut into small pieces and roast both with a drizzle of olive oil, pepper and rosemary, for about 15minutes), involve these ingredients with pieces of goat cheese orhalloumi cheese.
