Banana, Dark-Chocolate, Coconut and Oat Muffins - A treat to recover a Gorgeous Boy



These last few days were nothing near easy here at home, as our Edu was ill, but the situation is almost back to normal.
So to celebrate the recovery I decided to make a sweet little thing to give my little one plenty of energy.

When looking for what we had in the pantry the choice fell into Banana, Dark-chocolate (70%), Coconut and Oat Muffins.

As I´ve mentioned before in the posts on social networks these do not contain gluten or refined sugar and the yogurt used can be replaced by a soy yogurt. Only good foods to provide our little ones with good nutrients leaving them ready for lots of fun.

Ideal for breakfast, morning or afternoon snacks.



Ingredients (12 muffins):
- 2 very ripe bananas
- 3 Medium eggs
- 2 cups oat flakes (I used gluten free)
- 2tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 Cup of plain yogurt
- 1/2 Cup chopped dark-chocolate
- ¼ cup desiccated coconut (unsweetened)
- 1tbsp of ground flaxseeds
- 3tbsp maple syrup

Preparation:
-Pre-heat the oven at 160 ° C.

-In a blender or a mixer combine the bananas, eggs and yogurt and leave until very creamy.

-Add the mapple syrup, coconut and beat until well incorporated.

-Put this mixture to a clean bowl.

-On Another bowl engage the remaining 5 ingredients.

-Add the second mix to the first (creamy) and mix all together using a spoon.

-Divide this mixture for 12 muffin cases and bake for 20minutes.
