Sultanas, Dark-Chocolate and Oatmeal Cookies (Plus - Peanut Butter)
Hello, hello, here's another sweet recipe, which sweet ingredients are healthier than the normal choices, avoiding highly processed products (when possible).
Now, to make these cookies I did some research and I came across this recipe that I decided to manipulate, change some ingredients making it Gluten and Lactose Free.
I liked and Edu as well, but if you are looking for a crunchy texture, you won`t find in this recipe, because when we use coconut flour and other Gluten-free flours, a crunchy cookie s very complicated to get (if not impossible).
However, this combination of ingredients can be very tasty andsmooth..
Ingredients (40 cookies):
- 2 egg
- ¼ cup maple syrup
-1 cup almond milk (or hazelnut)
- ½ cup peanut butter (no gluten, dairy or additives)
- 1 cup coconut flour
- ½ cup gluten free flour (I used Doves)
-2 cups oats (gluten free)
- 2tsp cinnamon powder
- 2tsp baking powder
- ½ cup sultanas
- ½ cup of dark chocolate chips
Pre-heat the oven at 170ºC.
In a bowl combine the dry ingredients: the 2 flours, oats, baking powder, cinnamon and sultanas.
In another bowl mix the eggs with the milk. After, add the slightly melted peanut butter. Stir everything well.
Then add dry mix into the liquids, gradually incorporating all well.
Finally, add the chocolate chips.
Now, with slightly wet hands make the cookies with the size you like, place them in a tray and take to the oven for around 12 minutes (the time in the oven depends of the cookie’s shape)
