Finally the clouds decided disappear and the sun came out. So, nothing better to eat than something different, healthy, quick to prepare and economical.
As garnish for piece of grilled fish (cod) I decided to make a veggie fritters.
Looking to what I had in my pantry, I think I have created something very appetizing and kids will surely find it funny being able to pick up with their hands and they will be eating vegetables without knowing.
Ingredients (7 fritters):
-1 medium Courgette, grated
- 1 small onion, chopped
-1 medium carrot, grated
-4 tbsp Gluten-free Flour (you can use a normal flour)
- 1 clove garlic, chopped
- 4 button mushrooms, chopped
-salt to taste
- Black pepper to taste
- Chopped parsley, to taste
Combine all ingredients in a bowl, season with salt, pepper and parsley, mix it well with a spoon.
Put a non-stick frying-pan on heat, add a drizzle of olive oil and when hot start cooking the fritters.
Use a big spoon to put a little of the mixture into the hot pan and try to give a round shape (as the picture).
Cook 2 to 3 at a time and turn the heat down a little so they cook evenly.
2 minutes on each side.
This is my suggestion, but like so many other recipes posted here, this can also be adapted to the choice of other vegetables or even mixing vegetables with fish or meat, depending on tastes.
